
You guys. I am from New Jersey originally, which means we like our hairspray crunchy, and our crumb cake THICK. I mean, you just have not lived until you taste bakery crumb cake from “Joisey”. When I competed in bikini competitions back in the day, my competitions fell on Mother’s Day weekend. This meant that I had 2 excuses to eat crumb cake – the celebration of motherhood, and the celebration of the end of dieting. 🙂
These days, I eat treats on the regular, but I try to keep them high in protein and containing good, clean carb sources. That is what makes this recipe so crazy good. Not only is it a great source of energy with a side of delicious, it takes me back to my Jersey roots (cause, you can take the girl out of Jersey but… well, you know).
This cake uses my FAVORITE protein powder – Cinnamon Crunch by Quest. It also calls for a brown sugar alternative called Swerve. Swerve is made with erythritol and is not harmful to people or pets :-). You can find both at some local grocers and of course, on AMAZON (cause Amazon is the best).
